Preheat an oven to 150 degrees, line 2 large baking sheets with some grease-proof paper.
Put the dry ingredients into a food processor - the flour, ginger, cinnamon, bicarbonate of soda, sugar in and whizz for a few seconds until the lumps in the sugar have gone. Or grab a balloon whisk and give it a mix with that. (If I can avoid using a sieve I will use anything and this works pretty well!)
Add in the butter and blend it all together until the mixture looks like breadcrumbs in the processor or with the tips of your fingers and thumbs.
Then poke two holes for the ribbons with a cocktail stick - quite a bit bigger than you need.
